No time for canning? Freeze your tomato sauce.
To make a simple tomato sauce:
- Chop tomatoes into 1 inch cubes
- Place tomatoes in a saucepan and reduce to desired consistency. I let the sauce reduce about ⅓ in volume, but you can reduce less for thinner sauce, or longer for thicker sauce.
- Let sauce cool
- For a chunky sauce: pour sauce directly into ice cube trays
or
- For a smooth sauce: blend in food processor, then pour sauce into ice cube trays
Depending on how many ice cube trays you have on hand, it may take a few rounds of freezing to process all of your sauce. If this is the case for you, store sauce in the refrigerator between rounds of freezing.
Once cubes are frozen, they should easily break away from the ice cube tray. Empty frozen cubes in ziploc freezer bag and place bag back into the freezer for storage.
